Module description

This module continues your development from the level 4 Hospitality Operations by providing you with the opportunity to develop the knowledge of supervising teams as well as aspects of operational management. You will develop further the knowledge and application required for the successful planning and organising of your team for the delivery of products and services to customers in all aspects of hotel management operations.

You will understand the value of data to inform managers on trends, performance and analysis. You will review the use of technology applied to the running of a hospitality business.

Module aims

This module aims to enable you to:

1. Determine and critically evaluate the resources required within the hotel operations.

Resource management: human, physical, (e.g. materials, equipment), financial (including purchasing and stock control);
Management tools in resource planning.

2. Critically evaluate the skills required to deliver the services and products being produced for the hotel customers.

Skills needs analysis;
Customers expectations of service delivery;
Hotel service and product improvements.

3. Critically analyse departmental operational and financial performance.

Management reports;
KPI’s relevant to each department;
Benchmarking.

4. Understand the application of data and technology for managing hospitality businesses.

Data sources and data management;
Uses and application of data;
Advances and trends in technology;
Uses and application of technologies.

At the conclusion of this module you should be able to:

Learning and teaching methods

Learning and teaching will take the shape of either classroom based or online lectures and seminars where Wivenhoe House will be used to contextualize theory and illustrate practice. Self-managed learning will supplement seminars where you will be provided with guidance on required reading and on-line learning resources.
