Module description

This module continues from the level 4 module Hotel Operations 1 by providing you with the opportunity to develop the knowledge of supervising teams as well as aspects of operational management. You will develop further the knowledge and application required for the successful planning and organising of your teams for the delivery of products and services to customers in all aspects of hotel management operations. This module develops further your knowledge, understanding and application of financial performance management.

Module aims

This module aims to enable you to:
1. Determine and critically evaluate the resources required within the hotel operations.
- Resource management (human, physical, (e.g. materials, equipment), financial (including purchasing and stock control);
- Management tools in resource planning.

2. Critically evaluate the skills required to deliver the services and products being produced for the hotel guests.
- Skills needs analysis;
- Guest expectations of service delivery;
- Hotel service and product improvements.

3. Critically analyse departmental operational and financial performance.
- Management reports;
- KPI’s relevant to each department;
- Benchmarking.

4. Apply revenue management techniques to improve the business
- Yield management;
- Strategic and differential Pricing;
- Distribution channel management;
- The role of OTA’s.

At the conclusion of this module you should be able to:
1. Determine and critically evaluate the resources required within the hotel operations.
2. Critically evaluate the skills required to deliver the services and products being produced for customers of the hotel.

Learning and teaching methods

Learning and teaching will take the shape of individual and group tutorials, tutor led seminars and Wivenhoe House Hotel will be used to contextualize theory and illustrate practice. Self managed learning will supplement seminars and tutorials and you will be provided with guidance on required reading and on-line learning resources.
